Someone asked me my recipe for ADOBO, here it is: Ingredients: water 1 cup apple cider vinegar 1/2 cup garlic 4 cloves salt to taste black pepper 1 tsp laurel 2 small leaves chili put them all in a deep pan and when it starts to boil, add 1/2 to 1 kg of mixed chicken and pork meat preferably with bones, like chicken legs or wings and pork spare ribs. Let it boil for 10 minutes, or if you use pressure cooker, 5 minutes only. Add brown sugar, not the type you add to coffee. Let it boil for another 5 minutes. Check the taste and add soy sauce to taste. let it boil again for another 5 minutes. | Remove the meat and put them in a frying pan. Add a spoon of Sesame oil and let it cook until brown or a little scorched. Meanwhile, let the sauce boil until it turns a little sticky. Remove the laurel leaves. Put the meat on a plate and pour over the sauce. Garnish with the chili. You may also serve it on grated raw cabbage. |
